Easy Chicken Casserole
I have gotten into the bad habit lately of just making hamburger helper and boxed meals for dinner. Working the hours I do, it's very hard to cook nice dinners for my hubby. However after learning how quick and easy casseroles can be, I'm pledging to make at least 2 a week for him.
This recipe came from a co-worker of mine. She makes some of the most amazing food and the other day I told her what I had on hand and asked what I could make with it. She came up with the basic idea and I dressed it up a bit. Hubby absolutely loved it!
Easy Chicken Casserole (serves 2-4 depending on how big your portions are)
4 boneless chicken breasts
1 can french style green beans
1 can cream of chicken soup
8 oz. milk
onion flakes (or diced fresh onions if you have them)
garlic salt to taste
chicken & poultry seasoning
small amount sour cream
shredded monterey jack cheese
In a casserole dish place drained can of beans, then cream of chicken soup, milk and onion; stir well. Place chicken breast on top of mixture and sprinkle with chicken seasoning and garlic salt. Bake uncovered in a 450 degree oven for 40 mins or until chicken is done. After plating food, place a dollop of sour cream on top of chicken and sprinkle with cheese.

Ohhh sounds good. But if you make 4 servings they are 470 calories each, so a little rough on us dieters.
